Help! What’s For Dinner?

One of my goals for 2010 is to use absolutely every ingredient  in my kitchen without letting anything go to waste.  If I buy parsley for something, I need to have a plan for using the rest of it.  With various articles all over my fridge with ideas for “Double Duty Meals” as Rachel Ray calls them, I’ve grown more successful with practice.  Last week, the fridge looked absolutely barren.  I knew we had some frozen bison burgers in the freezer but it didn’t appear that we had enough ingredients to really pull together burgers.  Thanks to years of eating at Red Robin, we concocted something like Southwest Bison Burgers and they were delicious!  I rarely photograph our food but these were beautiful:

Why open-faced?  The buns have been in the freezer for more than 6 months and when defrosted, the tops were too hard to eat.  Keeping in with the goal of not wasting, the dog ate the tops and we enjoyed the bottoms just fine.  All food was on hand – no planning involved!


Spicy Pepper Jack Cheese

Red Onion

Lettuce (fancy mixed greens)

Drizzled with “Southwestern Sauce”

Topped with an avocado


Southwestern Sauce was equal parts of ketchup, taco seasoning & ranch dressing

    The sauce on those sounds sooo good 🙂 I might have to give it a try!
